CARNIVAL EARS
The ears is a very typical candy in carnival in Galicia. In my house they are made since I have use of reason. My mother always did them like nobody, although I have to say that we like the pancakes more and even then they always make their ears. With these amounts they come out very many since I do for my mother and for us. The flour if you need a little more you put it since each flour behaves differently. I hope you like them; They are very good!!! I do not know if I have explained myself well and if not, do not hesitate to ask me: -))))
INGREDIENTS:
850 g of baking flour
200 ml of water
2 eggs
100 ml of anise
125 g of cow's butter (if you do not find a good butter it serves you the same)
lemon zest
1 teaspoon salt
sunflower oil
sugar pair sprinkle
PREPARATION:
First of all say that I knead in kitchen aid but equally by hand or any robot that I loved. It is not a difficult mass to knead. What if you have to stay a soft, shiny, manageable mass that stretches easily. And now we go with the recipe.
We put the water in the glass of the kitchen, the eggs lightly beaten, the anise, the butter slightly melted, lemon zest and a teaspoon of salt. Add the flour on top of the liquids and place the mixing paddle. We mix at low speed. When it is well mixed, take out the shovel and place the kneading hook. We knead 15 minutes at speed 1. It remains a very manageable and bright mass as I said before.
We let the masaa rest inside the glass covered with a transparent film and covered with a kitchen towel for 30 minutes. This dough does not rise since it does not have yeast, we simply let it rest.
When it has settled, we put plenty of oil in a pan. Let it warm up well. Meanwhile, cojemos small portions of dough and stretch with a roller as thin as we can. Cut pieces of the dough and fry, leaving golden unburned. I in the vitro at 6 and a half the oil is kept at the ideal temperature. We repeat this until the dough is finished.
